How to: Cook the perfect flatbread

Our flatbread pizzas are a favourite on the menu at our venues!

Recently, we caught up with the Group’s Executive Chef James Brownrigg to learn about the art of perfecting the flatbread pizza.

1. Leave the dough covered at room temperature for an hour before rolling. The hour of rest and relaxation makes it easier to roll and creates a lighter, crisper base.

2. Dust your dough and work surface in semolina when rolling. This will add an extra crunch when cooked, and ensure it doesn’t stick to the bench. 

3. Don’t overload the toppings. Too many toppings makes the base soggy!

4. Make sure your oven is extremely hot (250C) before you put the flatbread in.

5. Keep turning the flatbread whilst cooking. Most ovens produce an uneven heat, so this ensures the flatbread is cooked evenly throughout.
